I finally have more confidence through Star's explanations and scientific proof regarding diet and our relationship to the sun. The sun is not our enemy and we actually must cultivate its benefits, and the missing link that everybody think is the sun's fault for our skin damage is laid in this course. Great Course!

That there are so many options to incorporate when eating a whole food diet in order to protect the skin from UV damage alongside using safe sunscreens. It was interesting to note that using a higher sunscreen doesn't mean that one has absolute all-day protection.

  Epigenetics Module 2: Found some more foods that contain Phytochemicals known to influence gene modification: Watercress contains EGCG, Cabbage contains Sulforaphane, garlic has an Organosulphur compound in it, there is Lycopene in Tomatos and Berries contain Elagitaninnins. All great foods with great phytochemicals in them.

  I'm so glad the assignment was food-based again. The five foods I have chosen with proven anti-inflammatory benefits are turmeric, ginger, hemp seeds, blueberries and almonds. Which is good as I eat most of these every day!

The 'A ha' moment for me was learning that firstly, I do not need to buy any collagen supplements as I can get all the requirements my body needs from eating the right type of foods. Secondly, the real 'a ha' moment was learning that if you take a collagen supplement which states it is for skin, it doesn't mean that our body will use it to regenerate skin, as it needs to be broken down before it can be used, and our bodies then decide where in the body it should be utilised depending on the greatest need.

This has been one of my favorite classes. It was really detailed and explained step by step how to prevent collagen loss and all the ways in which collagen is destroyed. Loved the ORAC section as well as the detailed coverage of Glycation Inhibitors. Great class in understanding all the ways collagen is affected by not only diet but also cooking methods.

This masterclass completely transformed the way I think about collagen. My biggest ‘A-ha’ moment was realizing that collagen supplements don’t directly rebuild skin collagen—they’re just broken down into amino acids like any other protein. I also didn’t know how essential nutrients like vitamin C, copper, and even amino acids like lysine and threonine are in collagen biosynthesis.

I am grateful that I now know how "collagen" powder are more hype than anything. It completely makes sense when you learn that it is basically a protein like any other one that just gets broken down and can be used in any manner.

For me it was the final scientific evidence that Collagen powder does not do what it says it does. I have had this discussion for so long with many of my friends but now I am armed with all I have learnt from this call I can now say with confidence what we really need for collagen.

I actually learned a lot more than I thought I would. The process of collagen biosynthesis is so clear now, I can make a picture in my head of everything that needs to happen. Explanation of food influence on our skin health, but not just the skin because we can copy and paste this knowledge on our whole body because mechanism is the same. It will be so much easier to help my own clients :)

Being schooled in nutrition, I found the science behind protein and collagen synthesis quite interesting, and at times difficult—which is a good thing! Definitely required some studying and reading additional papers to get a good grasp. I will be revisiting these modules often!

Recently, I've been on a quest to understand the differences between animal proteins and plant proteins. There's a lot of conflicting information out there! I had not heard about the amino acid pool and that helps me visualize how proteins are made from not only amino acids in the diet, but also through recycling, and the biosynthesis non-essential amino acids.

  While completing my assignment, I was utterly shocked that while I thought I had a pretty healthy diet, The only beauty food in my diet with a ORAC value higher than 10,000 was Ginger...Wow...what an eye opener! I must be deliberate in switching things up in my Grocery list. Fun exercise

  I just completed module 1 and found this very informative! It was also interesting to see how much cooking vs eating raw whole foods changes the AGEs so much... I've known that eating raw foods is healthier as it is more natural, but I've never seen it put to numbers like this. Very helpful to see.
